Maize cultivation. Maize, or corn, is a cultivar of the plant Zea mays of the grass family. Grown extensively around the world in subtropical and warm temperate regions, its range has been extended to colder zones by hardy varieties dev- eloped in the 1960s. Sweetcorn, or corn on the cob, is a variety of maize in which the sugar is not converted to starch. Other varieties are made into hominy, polenta, popcorn, and corn bread. It is used in corn oil and fermented to make alcohol; its stalks are made into paper and hardboard; and it is widely used as animal feed. Photographed in northern France.
