Einkorn wheat. Ears of Einkorn wheat. This variety is one of the earliest cultivated forms of wheat. It was first domesticated from wild forms approximately 9,000 years ago. Successive generations of plant breeding have produced modern wheat varieties which produce bigger yields and are easier to grow. However many modern varieties have developed problems with disease resistance and food allergies. Ancient varieties of wheat, such as Einkorn, may help plant breeders develop better varieties. Einkorn is still grown in remote areas as animal feed.
