Roquefort cheese on a plate. Roquefort cheese is a French cheese originating from the Roquefort-sur- Soulzon region. It is made from cow's milk and it is ripened in limestone caves using the mould Penicillium roquefortii to produce the blue-green marbling. This is a blue-coloured variety. Cheeses are a good source of calcium, but contain high levels of fat.
