Beer industry, 19th-century illustration. Beer pump in the cellar of a London restaurant, powered with carbon dioxide. The compressed carbon dioxide (CO2) raises the pressure in the pump, raising the beer from the barrels in the cellar to the dispenser upstairs. The use of CO2, rather than compressed air, keeps the beer fresh. Artwork published in 1867.
