Illustration depicting a Sorbetiere (ice pail). This apparatus, used for making ice at home, used a freezing mixture, usually two parts of crushed ice to one part salt, and was based on the principle that cold is produced by the liquefaction of substances. A canister containing the mixture to be frozen was placed in the centre of the bucket and the space around it packed with the freezing mixture. Dated 19th century
