Oleic acid. Computer model of a molecule of oleic acid, a monounsaturated fatty acid. Atoms are represented as spheres and are colour-coded: carbon (blue), hydrogen (gold) and oxygen (red). Oleic acid is the main constituent of olive oil. It is the cis isomer of elaidic acid. High concentrations of oleic acid can lower the levels of bad (LDL) cholesterol in the blood.
