Von Ebner's gland. Light micrograph of a Von Ebner's gland or gustatory gland, a serous salivary gland located near the clefts surrounding the circumvallate and foliate papillae near the middle of the tongue. They secrete a watery fluid into the cleft, which dissolves food components and aids taste reception. The secretion includes lingual lipase, an enzyme which begins the process of fat digestion.
