Osechi dishes are served at New Year's to celebrate the New Year. Each of the ingredients is filled with wishes for health and prosperity. Chestnut kinton, datemaki, black soybeans, red and white kamaboko. Vegetable umani with kuwai, shiitake mushrooms, lotus root, Kyoto carrots, kombu rolls, and fu balls. Sudoko (herring roe) and tazukuri (rice cake). Tiger prawns, rape blossoms, and chrysanthemum turnips. Tataki-gobo (burdock root) and beef rolled in red and white.
