Anise, coloured scanning electron micrograph (SEM). Anise, also known as aniseed, is the fruit of Pimpinella anisum which contains an essential oil with a very strong liquorice-like aroma and flavour. It is used as a culinary spice in dishes, and also as a flavouring in sweets and alcoholic beverages. The plant belongs to the apiaceae family which includes cumin, parsley, carrot, coriander, dill, parsnip, celery and many other important food plants.
